Cooking with a Ranger: 10-Minute Carrot Cake

Once again, I decided that I wanted dessert. This time, the impulse was for carrot cake. Here is a quick and easy way to make yourself a single serving carrot cake in a mug using inexpensive ingredients.

10-Minute Carrot Cake


Ingredients:

Cake

  • 1 tbsp. brown sugar
  • 2 tbsp. grated carrots
  • 3 tbsp. pancake mix
  • 1 tsp. cinnamon
  • 1/4 cup water

Frosting

  • 2 tsp. brown sugar
  • 1 tbsp. cream cheese

Materials

  • Mug
  • Carrot Peeler
  • Grater
  • Spoon
  • Microwave

Total time: 10 minutes

Cook time: 2 minutes | Prep time: 8 minutes

 

 

Directions:

  1. Peel the carrot.
  2. Grate 2 tbsp. carrot into the Mug.
  3. Add brown sugar, pancake mix, and cinnamon to Mug and combine.
  4. Add water to Mug and combine.
  5. Cook in the microwave for 2 minutes.
  6. Combine cream cheese and frosting, then spread on top of the cake.
